Strawberries & tipsy orange

I'm not much of a fan for fancy desserts, but I do enjoy fruit and I am quite partial to the odd drop or two of alcoholic refreshment so I often combine the two for a tasty palate sweetener to round off a pleasant meal.

The pleasant thing about using fruit in desserts is that it's so easy to work with, not expensive, and you can often make it in advance and keep it in the refrigerator ready for the final touches just before serving.

And a little oopsie of liqueur is normally quite sufficient to give it a tasty exotic flavour.

To prepare four helpings of tipsy orange slices with strawberries you will need:

Ingredients:
* 4 oranges, sliced and all pith removed
* 60ml Cointreau or Grand Marnier liqueur
* The juice of one lemon or lime
* 4 tablespoons grated coconut
* 1 tablespoon brown sugar
* 20 fresh strawberries or a tin of strawberries (I often use the tinned variety — it tastes just as good and is handy for when strawberries are not in season).

Instructions:
Arrange orange slices in a large flat bowl. Mix the sugar, liqueur and lemon juice and spoon over the orange slices. Cover and chill overnight. To serve, arrange the orange slices in individual dessert dishes. Place five strawberries at the centre of each individual dish. Spoon any left over marinade syrup over the orange and strawberries (if you use tinned strawberries sprinkle some of the syrup over as well). Sprinkle with grated coconut and serve.

Footnote: A dollop of ice cream also goes well with the tipsy fruit.
