FIIRO, FLOUR MILLERS COLLABORATE ON CASSAVA FLOUR
THE Federal Institute of Industrial Research Oshodi, Lagos (FIIRO) and the Flour Millers Association of Nigeria have engaged in discussions to speedy industry-wide inclusion of high quality cassava flour in bread.
Director-General and Chief Executive Officer of FIIRO, Dr. Gloria Elemo, revealed this at the end of a meeting with the Technical Committee of Flour Millers Association of Nigeria, which sought ways to utilise the recipe developed by the institute.
The association is interested in leveraging on the expertise of FIIRO to adopt the recipe developed by the institute for baking bread with 10 per cent cassava flour inclusion.
Spokesman for the millers, Mr. Rotimi Fadipe, said the committee had constituted a team to monitor the compliance of all milling companies in Lagos with the policy.
Fadipe said through the collaboration, the institute was expected to coordinate the activities of all stakeholders - cassava growers, processors, millers, master bakers and government in such a way that high quality cassava flour can be made readily available in the market for millers.
